Recipe of Kali Gajar ka Halwa
Ingredients
1.One kilogram of organic purple or black gajar (carrots), peeled and grated
2.One and a half litres of whole milk
3.One cup of Khoya (milk solids)
4.One and a half cups of sugar
5.One teaspoon of green cardamom powder
6.One cup of desiccated coconut
7.One-fourth cup of ghee
8.Two tablespoons of chopped almonds
9.Two tablespoons of chopped pistachios
10.One tablespoon of raisins
Instructions
1.Place the grated gajar in a saucepan.
2.Add the milk and stir well.
3.Cook on a medium flame for 10 minutes, stirring continuously.
4.Add the khoya and sugar and mix well.
5.Cook on a medium flame for 15 minutes, stirring continuously.
6.Add the cardamom powder, coconut and ghee and mix well.
7.Cook on a medium flame for 10 minutes.
8.Add the almonds, pistachios and raisins and mix gently.
9.Cook on a medium flame for 5 minutes.
10.Serve hot.
