Prep time: 10 minutes

Cooking time: 10 minutes

Ingredients

4 large eggs

3 tablespoons of cooking oil, divided 

1 cup diced onion

 2 cups chopped mixed vegetables, such as bell pepper, carrots, beans, etc. 

1/2 cup sliced scallions, white and green parts divided

pinch of salt

4 cups cooked rice

2 1/2 tablespoons soy sauce

1/2 teaspoon five-spice powder

dash of ground white pepper, optional

1 to 2 teaspoons toasted sesame oil

Instructions 

1. Break the eggs together into a small bowl and beat them well.

2. Place the pan on medium heat and add 1 tablespoon of cooking oil. Once the pan is hot, add the egg mixture and scramble them for a minute and a half. Then, turn off the heat and transfer the eggs to another dish. 

3. Place a wok on high heat and drizzle the remaining 2 tablespoons of oil on it. Add the onions and cook them for about 2 and a half minutes; keep stirring continuously. Add the mixed vegetables and white parts of the scallions and cook for it for another 2 minutes. Season the cooked vegetables with a pinch of salt.

4. Throw the cooked rice into the pan or wok and cook for a while; the rice should be heated thoroughly. If there are any clumpy bits of rice, separate them well with the back of your spoon. 

5. You can now add the soy sauce, five-spice powder, a little white pepper (this is optional), and sesame oil. Stir it well to distribute the seasonings. Drop the scrambled eggs in and stir them for some time. Garnish with remaining sliced scallions. 

6. Your mouth-watering fried rice is ready to serve and be devoured!
