Recipe for Chilli Chicken with Bone

Chilli chicken is a very popular dish in many parts of Asia, especially India and China. It is typically made with chicken that has been cooked in a spicy sauce, often with chilli peppers, and served over rice. This dish can be made with either boneless or bone-in chicken, and the bones add a lot of flavour to the dish.

To make this dish:

  1. Start by cooking the rice according to the package instructions.
  2. While the rice is cooking, heat a large skillet over medium-high heat and add oil to it.
  3. Add the chicken to the pan and cook for about 5 minutes per side, or until golden brown.
  4. Once the chicken is cooked, remove it from the pan and set it aside on a plate.

In the same pan that you used to cook the chicken, add all of the ingredients for the sauce: diced onion, garlic cloves, ginger paste, green chilli peppers, red chilli powder (cayenne pepper), ground cumin, garam masala powder (or curry powder), tomato puree/paste, and salt. 

Stir everything together and cook for about 5 minutes until everything is nicely combined. Add water if needed to thin out the sauce slightly. Now add the cooked chicken back into the pan and stir everything together. Cook for a few minutes until the chicken is heated through and coated in the sauce. Serve over cooked basmati rice and garnish with freshly chopped cilantro leaves.

Recipe for Chilli Chicken with Curry

This dish is a fusion of two classic cuisines – Indian and Chinese. It is a portion of popular street food in Mumbai, India. The chicken is marinated in a mixture of spices and then fried until it is crispy. It is then simmered in a curry sauce made with tomatoes, onions, and chillies.

This dish can be made as spicy or mild as you like by adjusting the amount of chilli used in the curry sauce. Serve over steamed rice or noodles for a complete meal.

To make the marinade for the chicken, combine all of the following ingredients in a bowl:

  1. Ginger paste, garlic paste, red chilli powder, cumin powder, coriander powder, salt, pepper, lemon juice, and yoghurt.
  2. Mix well and add the chicken pieces.
  3. Marinate for at least 30 minutes (up to overnight if time allows).

Heat oil in a large pan over medium heat to make the curry sauce. Add diced onion and fry until golden brown. Add garlic and ginger and fry for an additional minute. Add canned diced tomatoes (undrained) and tomato paste to the pan and stir well. 

Add salt, sugar, garam masala powder (or Curry Powder), ground cumin, ground coriander seed powder, and red chilli flakes (or fresh chopped green chilli peppers). Stir well and bring to a simmer. Let cook for 10 minutes or until slightly thickened. Next, add the cooked chicken to the pan and stir well to coat with the sauce. 

Add more salt, sugar, garam masala powder (or Curry Powder), ground cumin, ground coriander seed powder, and red chilli flakes (or fresh chopped green chilli peppers) to taste. Stir well and cook for an additional 5 minutes or until heated through. Serve over steamed basmati rice and garnish with freshly chopped cilantro leaves.
