Eggs are one of the most versatile ingredients around. They can be used in sweet and savory recipes and taste great with almost anything. Eggs are also perfect for breakfast because they don’t require any prep time; you only need to crack them open and heat them up (or not) as desired. However, not all eggs are created equal: there are some ways to prepare eggs that take this humble breakfast staple from “yawn” to “omg!” Here are five amazing ways that I’ve discovered:

Poached eggs

Poached eggs are the ultimate breakfast food. They’re versatile, healthy, and delicious—not to mention easy to make!

To poach an egg, fill a medium-sized pot with water and add 1/2 teaspoon vinegar or lemon juice. Bring the water to a gentle boil; once it bubbles, cook for 1 minute before adding your eggs one at a time. After 2 minutes, remove each egg with a slotted spoon and serve with any toppings you like! They taste best served warm but can be eaten cold, too (like hardboiled eggs).

Soft boiled eggs

To make soft-boiled eggs, you need to bring water to a boil, then add eggs and time them for about 6 minutes. When they’re done cooking (a little less than hard-boiled), carefully remove them from the hot water with a slotted spoon and serve them with your favorite toppings.

The difference between soft-boiled and hard-boiled eggs is that the egg yolk is still runny when served in the former.

Hard-boiled eggs

Hard-boiled eggs are a great way to start the day. To hard boil an egg, fill a pot about halfway with water, and bring it to a rolling boil. Carefully lower the eggs (one at a time). Bring water back up to a boil and let cook for 9 minutes. Remove from heat, drain hot water and let sit for 5 minutes before peeling.

You can tell if an egg is hard-boiled by picking it up; if you’re able to roll it between your fingers without any resistance, then it’s done! You may also notice that the yolk is more orange than yellow in color after being cooked too long or over-boiled. There are several ways to use hard-boiled eggs:

  • Make deviled eggs by mixing together mayo, mustard powder, paprika, salt & pepper
  • Slice into quarters or halve lengthwise before dipping into potato salad dressing (my favorite!)

Scrambled eggs

Scrambled eggs are one of the simplest ways to start your day. The key to making them taste great is using a nonstick pan and breaking up the eggs with a spatula until they’re fluffy, then adding salt and pepper to taste. For breakfast on the go, scrambled eggs can be eaten by themselves or served with toast or a bagel!
