This Spinach Stuffed Chicken Casserole is the perfect easy weeknight meal! 

It’s made with simple ingredients and can be put together in just a few minutes, so it’s perfect for busy families. And best of all, it’s packed with tons of delicious flavors and textures. 

Ingredients: -1 pound boneless, skinless chicken breasts, pounded thin -1/2 cup breadcrumbs -1/4 cup parmesan cheese -1/4 teaspoon salt -1/4 teaspoon black pepper -3 tablespoons olive oil -3 cups fresh spinach, chopped -1 (14 ounces) can diced tomatoes, undrained -1 (6 ounces) package shredded mozzarella cheese Instructions: Preheat oven to 375 degrees F (190 degrees C). Grease a 9 x13 inch baking dish. 

Mix breadcrumbs, parmesan cheese, salt, and pepper in a small bowl. Set aside. Place chicken in another small bowl; spread with olive oil. With your fingers, rub the chicken evenly with the mixture. Place chicken into pan; broil on each side for 4 minutes or until slightly pink in the center.

Bake for 25 minutes or until chicken is cooked through and bubbly. Sprinkle with Parmesan cheese before serving
