Apple & peach fruit crumble 

Ingredients:

For the fruit layer

  • 4 Apples + 3 peaches 
  • 100 gm Caster Sugar 
  • 30 gm black raisins 
  • 1 tbsp butter 
  • 1 tsp Cinnamon powder and a cinnamon stick 
  • 4 tbsp lime juice 
  • Water 

For the Crumble topping

  • 230g Flour 
  • 170g Butter chilled 
  • 50g Oats 
  • 110g Caster Sugar 
  • Cinnamon to taste

Method:

  1. Cut the apples & peaches into small cubes. Coat with lime juice to prevent discolouration. 
  2. Sauté the fruits in butter. Add sugar, cinnamon powder and cinnamon stick. Cook it till it’s soft. Keep it aside.

How to make the Crumble:

  1. Mix all the crumbled ingredients in a bowl and keep it aside.
  2. In a baking bowl, place the cooked fruits and then spread the crumble evenly on top.
  3. Bake at 180 degrees celsius in a pre-heated oven for 20 to 25 minutes.

Blueberry, Jamun & Litchi Muffins

Fruity Muffins

Ingredients:

  • 1 cup flour 
  • 1 cup castor Sugar 
  • 1/2 cup butter 
  • 1/2 cup Curd
  • 1/4 cup milk  
  • 1/2 tbsp Vinegar 
  • 1/4 tsp Baking soda 
  • 1 tsp Baking powder 
  • Jamun + blue berry + litchi ( fruit all together- 1/4 cup) 
  • Vanilla essence – ¼ tsp 

Method:

  1. Chop the jamuns & litchis. Keep the blueberries whole. Mix them with ½ tablespoon flour and keep it aside.
  2. Mix milk & vinegar and keep it aside for five minutes.
  3. In a bowl, add cream, sugar & butter till light & fluffy.
  4. Sift the flour, baking soda and baking powder.
  5. Mix the batter using cut & fold method & add in the fruits and mix well while reserving some fruits for topping.
  6. Add the muffin batter to the muffin mould. Place reserved fruits and bake in a preheated oven for 20-25 mins or till a toothpick inserted comes out clean.
