What is Kombucha?
Kombucha is a bubbly fermented probiotic drink made of yeast and bacteria. They are friendly bacteria that are used to boost health. It is prepared with sweetened green or black tea which is fermented by a symbiotic colony of bacteria and yeast (SCOBY). At the time of fermentation, the yeast breaks down the sugar and releases friendly bacteria which makes it probiotic. Kombucha is generally a yellow/orange color-looking beverage and has a slightly sour taste. This tarty drink gets carbonated because of fermentation that adds fizziness to it.
Where did Kombucha Originate?
It is believed to have originated in the Northeast part of china referred to as Manchuria in 220 BC. Back then it was mostly consumed for its health benefits. It became quite popular in Japan and Russia because of its sour taste. Later the popularity of this drink paved its way to even European countries and USA. Thanks to social media and fitness experts for introducing the drink, it certainly has picked up the momentum and now every second person wants to try it.
Is Kombucha a healthy drink?

Can we make it at home?
You can make Kombucha at home and yes that is true!. There have been many different variations to it. The key ingredients used to make this drink are sugar, yeast, black/green tea, and of course drinking water. Mix all this together and let it ferment for weeks. The fermentation process is what makes the drink taste unique. Do use a sterilized glass jar to make it and cover the top of the jar/bottle with a piece of cloth.
To make Kombucha you need to take a large glass jug, to which add 1 and a half cups of sugar and add 3 cups of hot water. Stir and let the sugar dissolve completely, add 2 tea bags (green/black tea) and let it steep for 8 minutes. After the tea liquor is infused, remove the tea bags and add 1/2 cup of vinegar or a cup of prepared Kombucha. Then slide in the active SCOBY/Yeast. Cover with a cloth or filter and keep it for fermentation for 15-20 days. You need to store it at 65 to 80 degrees in a cool dry place. The longer you store the Kombucha the less sweet it will taste.
Is there an Indian Version of Kombucha?
According to an article by Indian Express, Kanji is an Indian version of Kombucha. It is made with black or red carrots beets mustard seeds and a pinch of asafoetida. It even has a slight alcoholic taste. It is also fermented by keeping in sun for a week. This drink has to be stirred once a day with a dry spoon. Later it can be stored in the fridge and consumed.
Kombucha has become this new trendy drink that is making some miraculous changes in health. And is also being researched further for cures like AIDS and cancer.
