Ingredients: 1 beet, peeled and grated, 1 carrot, peeled and grated, 1 orange, peeled and diced, 1 tbsp olive oil, 1 tbsp balsamic vinegar Salt and pepper to taste

Instructions:

  1. Mix the grated beet, carrot, and orange together in a large bowl.
  2. Drizzle with olive oil and balsamic vinegar, then season with salt and pepper to taste.
  3. Serve immediately or refrigerate for later.

2. Cauliflower Rice Pilaf 

Ingredients: 1 head of cauliflower, riced 1 tbsp olive oil ½ onion, diced 2 cloves garlic, minced ¼ cup chicken or vegetable broth Salt and pepper to taste

Instructions: In a large skillet, heat olive oil over medium-high heat. Add the onion and garlic, then sauté until both are softened. Stir in the riced cauliflower and chicken broth. Season with salt and pepper to taste. Cook for about 5 minutes or until the cauliflower is tender but not mushy. Serve immediately.

3. Roasted Brussels Sprouts with Cranberries and Pecans 

Ingredients: 1 lb Brussels sprouts, trimmed and halved ¼ cup dried cranberries ¼ cup pecans, chopped 2 tbsp olive oil Salt and pepper to taste

Instructions: Preheat the oven to 375 degrees Fahrenheit. Mix the Brussels sprouts, cranberries, pecans, and olive oil in a large bowl. Season with salt and pepper to taste. Transfer the mixture to a baking sheet lined with parchment paper or aluminium foil. Roast for 20-25 minutes or until the Brussels sprouts are crispy on the outside but still soft in the centre. Remove from the oven, let cool slightly, then enjoy this best dietary secret!
