Salt to taste 

For the masala paste:

Two dried red chilies, broken into small pieces 

1/4 cup coriander leaves, chopped (cilantro) 

3-4 garlic cloves, chopped 

3-4 green cardamom pods, crushed 

One teaspoon of ground turmeric 

To make the masala paste: 

Mix all the ingredients together in a small bowl. Set aside. 

To cook the okra:

  1. Heat the oil in a large saucepan over medium heat.
  2. Add the onions and fry until softened.
  3. Add the garlic, ginger, chili, and cumin seeds and fry for another 2 minutes.
  4. Add the masala paste and fry for another minute.
  5. Add the cardamom pods and fry for a minute more.
  6. Add the okra and salt to taste.
  7. Cook for about 10 minutes, until the okra is cooked through and the sauce has thickened.
  8. Serve hot.
